Back in the K

Headed to my hometown this weekend to have a visit with my family and friends. This is pretty much the last weekend that I have until Christmas and I like to get in a weekend before all the up-coming shopping insanity.

I was trying to think of what recipe or meal truely means coming home for me. I think for a lot of people it would be a roast dinner or something along those lines, in my case the first thing that popped into my head was Lasagna.

Sure enough, as soon as I walk in the house my mom announced to me that she had made Lasagna for dinner.  I am now stuffed and looking forward to eating the leftovers for lunch tomorrow.

Firsts

This is the first song that I purchased, back in the day when you could buy single songs on a 45. I think I was 10 years old. Yep, a 10 year old with excellent musical taste for the 80’s.

The first recipe I remember keeping was for Banana Chocolate Chip Muffins. I’m not sure where it came from originally, I copied it from an index card in my mom’s recipe box on to my own index card. Today it is still a staple in my baking  repertoire because it’s so handy for using up those overripe bananas. For some reason I like to eat these muffins frozen.

preheat oven to 400f

2 eggs

1/3 cup butter

1 cup mashed banana (about 3 bananas)

1/2 cup chocolate chips (or sometimes 1 cup, depends on the day)

1 1/3 cups all purpose flour

1/2 cup sugar

4 tsp baking powder

1/2 tsp salt

mix all the wet and dry ingredients separately, then stir together just enough to blend. divide batter into greased muffin tin and bake for 17-20 minutes. Makes 12.
