This is my favourite healthy “in a pinch” meal to make. I always have all the ingredients on had at any given time and it takes about 20 minutes to make including the prep.
I don’t use a recipe for this, so you will have to bear with me.
Drain and rinse a 19oz can of black beans. In a bowl mash the beans with 1/2-1 cup salsa (hot, medium, or mild), season with salt and pepper if you feel like it.
Stir in about a cup of cheese. I use cheddar, mozzarella, Monterey Jack, or whatever is in the fridge.
Spread mixture over half of a tortilla, and fold over. At this point you could chop up some red onions, peppers, cilantro and
put that in the quesadilla before baking.
Arrange Quesadillas on a cookie sheet, bake at 350F for 5-10 minutes a side (time depends on how full you stuff them).
Serve with Sour cream, Salsa,
guacamole and enjoy!

Other than heading south that is.
How about spending the weekend with the oven cranked and baking with the 20 or so bananas that have been taking up freezer space for the past 6 months?
Last weekend I was at Caroline’s and we whipped up 2 batches of muffins plus these 2 loaves of Banana Bread. Yummy.

Immediately after my last post, I went back to the stew I was cooking and inadvertently substituted corn starch with baking soda. I’m now heading out the door to pick up the pizza.
Wish I had a picture of the volcanic beef stew that used to be supper. This will have to do.
